RECIPE: Parmesan Ranch Potato Chips

Parmesan Ranch Potato ChipsQuick & Easy Party Chips

Ingredients

  • 1 Russett Potato per person
  • 1 Tbsp Dry Ranch Dip Mix
  • 1 tbsp Finely grated Parmesan Cheese
  • Cooking Oil

Directions

  1. Preheat oil in deep fryer to 375F or large saucepan on High
  2. Peel Potatoes
  3. Use a vegetable turner to make spiral chips
  4. Line a cookie sheet with paper towels
  5. Arrange spiral chips in flat layer on paper towels
  6. Use more paper towels on top to firmly press out any water
  7. Repeat step five as many times as you need to remove all moisture, potatoes need to be dry
  8. Deep fry chips, turning until brown
  9. Drain on wire rack
  10. Mix ranch seasoning with Parmesan until combined together
  11. sprinkle chips with seasoning while hot
  12. Serve in chip bowl

 

 

Use this Seasoning Salt For:

  1. French Fries
  2. Spiral Chips
  3. Vegetable Chips

 

 

Will store for 3 months  if sealed in an airtight container with lid, don’t forget to label it & write used By date

Ok, so this definitely isn’t on anyone’s diet, is not for those trying to lose weight or live a healthy life, not recommended by any Cardiologist in the country, but everything in Moderation, right?

RECIPE: Fried Calamari

calamariQuick & Easy Party Appetizer


Ingredients

  • 1 Lb Frozen Calamari
  • 1/2 Cup All purpose Plain Flour
  • 1 Tbsp Lemon Pepper Seasoning
  • Cooking Oil

You will also need:

  • 1 large gallon size Ziploc Bag
  • Large Saucepan / Pasta Pot or a Deep Fryer
  • Metal Slotted Spoon or Tongs
  • Baking Tray – lined with paper towels or a wire cake rack


Directions

  1. Preheat Oil to 375F
  2. Defrost calamari in Fridge
  3. Mix together in a large ziplock bag, flour & lemon pepper, shake until combined
  4. Place Calamari in Seasoned flour, seal bag and shake, turning over until all calamari is coated
  5. Cook in hot oil 2-3 min, turning with metal slotted spoon
  6. Drain on paper towels inside a baking dish
  7. Serve Hot



Tips:

  • Make sure oil is pre-heated to 375F before you drop calamari into oil or it won’t cook properly and you will lose the breading
  • You can also Defrost the calamari in the microwave 60-90 seconds on high
  • You can use fresh or frozen calamari, shrimp or baby octopus
  • For a low carb, healthier version, you can use wheat flour instead of all purpose
  • I use Smart Balance Omega3 Cooking Oil for deep frying
  • Do not overcook calamari or it will be rubbery

RECIPE: Bacon-Wrapped Chicken

Super Easy Appetizer, Great Finger Food for any Gathering or Party

Ingredients

  • 1 Skinless, boneless Chicken Breast per person
  • 1 lb bacon
  • Parsley flakes
  • 1 cup low sodium chicken broth


Directions

  1. Cut chicken into strips and  soak in chicken broth  for 1 hour in fridge
  2. Preheat oven to 400F
  3. Wrap each piece of chicken in bacon Make sure bacon ends are on the underside
  4. Place wrapped chicken in baking dish
  5. Cook 15-20 mins
  6. Remove from oven
  7. To crisp bacon, preheat skillet to med-high and pan fry chicken Use tongs) after taking out of oven,  turning over as you go to crisp each side



If you are cooking Chicken with baked vegies, it’s okay to cook them at 375F but you will need to cook them 45 min

RECIPE: Spinach & Cheese Triangles

Super Easy Appetizer, Great Finger Food for any Birthday or Football Party

Ingredients

  • 1 Package frozen spinach
  • 8 oz Grated Mozzarella Cheese
  • 3 Bacon Rashers
  • 1 Egg
  • Filo Pastry Sheets
  • 1 egg extra

Directions

  1. Preheat oven 375 F
  2. Cook bacon in non stick skillet
  3. Drain & chop into pieces
  4. In a microwave mixing bowl, add spinach, cheese and lightly beaten egg
  5. Mix through with fork until combined
  6. Microwave on high 1 min till cheese has melted
  7. Add cooked bacon and combine
  8. Lay filo pastry sheet flat
  9. Spoon spinach mixture into sheet and fold into a triangle
    folding over and over until sheet finished
  10. Lightly beat 2nd egg in a small glass bowl
  11. Lay Spinach triangles flat on cookie sheet tray
  12. Brush with lightly beaten egg
  13. Cook 10-15 mins at 375 F on middle oven rack until brown
