RECIPE: Apple Turnovers

Ingredients

  • 2 Granny Smith Apples
  • 1 Stick Unsalted Butter
  • 1 Tsp Cinnamon
  • 1/3 Cup Brown Sugar
  • 1 Tsp Cornstarch
  • 2 Tsp Lemon Juice
  • 1 Tsp Vanilla Extract
  • 2 Tsp Water
  • 1 Package Puff Pastry Sheets
  • 1 Egg Yolk to baste or cooking oil spray

 

 

ICING:

  • 1 cup confectioner’s icing sugar
  • 2 tbsp Milk
  • 1 tsp Vanilla Essence
  • 1 tsp Lemon Juice
 

Directions

  1. Pre-heat Oven 400 F
  2. Cut Apple in Half
3. Turn half apple over on chopping board
4. Cut into thin slices

 5. Remove core as you go

6. Cut twice across the opposite direction
of slices, so you have diced apples
7. In a large soup saucepan on med high, Melt butter, add apples

8. Add brown sugar

9. Add cinnamon

10. Stir to melt butter with wooden spoon
11. Add all remaining ingredients, Separate Puff Pastry Sheets
12. Cut each sheet into thirds along fold

13. Cut lengthwise down through Middle
so you have 6 rectangles

14. Puree apple mixture in blender or magic bullet till smooth
15. Spread a small amount on left side of pastry rectangle

16. Smear across bottom half of pastry

17. Fold corner over to top of pastry

18. Fold right side back over the triangle side as shown

19. Turn pastry over and fold remaining corner

20. Make sure all sides are sealed
21. Repeat till you have completed 12 turnovers
22. Lightly brush with egg yolk or spray cooking oil on bottom of pan
and then over top of turnovers
23. Bake in Pre-Heated 400 F oven for 15 minutes

24. While turnovers are cooking, Make Icing

Mix icing sugar, milk, vanilla essence, lemon juice

div>in a small mixing bowl and whisk until lump free

Transfer to sauce bottle for easy pouring / drizzling
Let turnovers cool 15 mins
Drizzle with icing

TIPS:

If you prefer, you can peel apples first, they won’t have as much fiber
