RECIPE: Bacon, Egg & Cheese Breakfast Quiche

  • 5 Eggs
  • 1+1/2 Cups Extra Sharp Grated Cheddar Cheese
  • 2/3 Cups Light Sour Cream
  • 1/4 Cup Bacon Bits

You will also need:

  • Oven Proof Ramekins
  • Pyrex Dish
  • Non-Stick Cooking Spray


  1. Pre-heat oven to 350F
  2. Beat all ingredients together with a fork in a large mixing bowl (not plastic) until well combined
  3. Lightly spray ramekins with non-stick cooking spray
  4. Pour egg mixture into ramekins
  5. Place ramekins inside a glass oven proof pyrex dish
  6. Bake in pre-heated oven for 1 hour
  7. Turn oven Off
  8. Remove pyrex dish and set aside for 10 minutes to cool a little
  9. Be careful when removing ramekins, use a pot holder, they will be extremely hot
  10. Serve while hot

You can add

  • chopped mushrooms,
  • spinach
  • diced bell peppers
  • vegetables

to the mixture if you wish (1/2 cup), you may need to add an extra egg if mixture is too thick with the vegies

You could add

  • chopped ham
  • chicken
  • leftover meat
  • cooked ground sausage (1/4 cup)

Store left overs in airtight container in the fridge with the lid on, reheat 30-60 seconds in microwave on high

You could double this batch and make ahead for a quick work week breakfast or lunch and just reheat one a day as needed

These would make a nice lunch with a side salad
